Lotus Root Asian Delight

A delicious food I’m newly lovingg- lotus root!  It’s the root of the beautiful lotus flower, and is not only tasty, but healthy- containing fiber, protein and vitamin C.  It’s an interesting texture to work with– you can boil it in soups, or keep it crunchy for salads, stir fry, or chips.  (And look how pretty it is!)  Asian grocery stores, like H Mart, carry it.

I went with a green curry theme, and packed in the flavor.

Steps:  Cook the rice in the rice cooker, with some chicken broth seasoning; peel and chop the lotus root and boil it for just a few minutes; chop up the veggies, garlic, ginger../microwave the edamame; toss everything into the skillet and saute, adding stir fry sauce or soy sauce if you choose; pour the curry packet into the mix, along with a bit of almond coconut milk to make more sauce like; add red pepper spice and a pinch of curry paste for added spice; pour over the rice and top with cilantro!

My Ingredient list:

  • Lotus root
  • Edamame
  • Fresh ginger
  • Snap peas
  • Onion
  • Garlic
  • Green pepper
  • Stir fry or soy sauce
  • Green curry sauce packet (found at World Market)
  • Green curry paste (just a pinch for added spice)
  • Almond coconut milk– for a lighter option than the canned version
  • Red pepper spice
  • Cilantro
  • Jasmine Rice (brown)
  • Sesame seeds and peanuts would have been good too
