Orange “Chicken” Tofu

Happy world vegetarian day!  Raised a vegetarian, it’s easy for me to love tofu….but I can see how people might not ha.  For those that dooo, here is a dinner idea for you to try tonight..

Ingredients:

  • Package of extra firm tofu
  • 1 orange
  • 1 cup orange juice
  • peas (or broccoli, green peppers…)
  • 1 onion
  • garlic
  • olive oil for sauteing the onion and garlic
  • soy sauce (optional)
  • teriyaki sauce (optional)
  • almond slices (optional)
  • quinoa in place of rice (optional)
  • wondra flour (optional) to make the sauce thicker

Directions:  

  1. Blot excess water from tofu, slice into cubes, brown in the skillet with olive oil
  2. move to one side and saute the onion and garlic
  3. toss in whatever veggies you are using
  4. mix up the sauce to taste, in a separate bowl– a fresh squeezed orange, cup of oj, and however much soy sauce and teriyaki sauce is desired
  5. pour over contents of skillet, cooking 1-2 minutes and then adding wondra flour to thicken the sauce if needed
  6. enjoy over quinoa or rice
