Layered pudding pancakes with strawberries on top: a fancy-shmancy, filling breakfast!  Go with whole wheat/whole grain pancake mix (I used Hodgson Mill) and fat free, sugar free instant chocolate pudding mix (with fat free milk).  Top with strawberries for added fiber!

For a more decadent approach, substitute the pudding for nutella…nom!  Sprinkle with confectioners sugar or top with cool whip.
