Banana Bread with M&M’s!

Over-sized m&m’s, oh whaat!

I worked off of this recipe on epicurious:  Banana Bread with Chocolate Chips and Walnuts , but I replaced the mini chocolate morsels with gigantic m&ms!  Makes for a nice, chocolate-y surprise here and there.  And chocolate is good for you…because it makes you happy…and happiness is good for the heart.  So skip the chocolate if you hate being happy.

Other tweaks:  I used whole wheat flour and a splenda-brown sugar mix.  I also used about half the butter called for and added a tablespoon or so of olive oil.  It would have turned out better if I had added applesauce, butttt that was not in my fridge.

Grocery List

  • 2 very ripe bananas
  • Sugar of choice
  • Flour of choice
  • Eggs or egg substitute
  • Vanilla extract
  • Salt
  • Baking soda
  • Baking powder
  • Butter
  • Chocolate bits or m&ms (Reese’s pieces would be amaaaze..doing that next time I feel like being fat again)

And the “optional” list:

  • Cinnamon
  • Walnuts – toasted
  • Olive oil
  • Applesauce
  • Lemon juice
  • Reese’s pieces!

I don’t really like to follow steps so closely..#aintnobodygottimeforthat.  eicurious had me layering ingredients and whatnot..huh?  I just mixed my flour, baking soda, baking powder, salt and sugar in one bowl.  Then mixed the butter, olive oil, eggs, bananas, and vanilla extract in another bowl.  Combine.  Toss in the walnuts (chopped to taste) and a cup or so of m&ms (they end up really spread out if using the large kind).  Spread into a casserole dish and bake at 350 for 45 min. to an hour.
