I hope everyone had a delicious and joy filled Christmas/holidays!  I’m SO sad it’s over and I refuse to take down the Christmas tree, but at least it’s a shiny new year andd snowboarding season!! (in this part of the world anyway).  Below are a few yummy Christmas goodies, along with some everyday desserts and photos of my absolute favoriiittee time of the year.

Eggnog french Toast— use whole wheat bread and a light version of eggnog, like this soy version, or Trader Joe’s light eggnog.

Santa strawberries— so cute!  Cut each strawberry into 2 pieces and plop the whipped cream on.  I used chocolate bits for the eyes.

Pecan pie— Pick up a bottle of karo corn syrup and work off of the recipe on the back, using a splenda sugar mix for a more low cal approach (even though pecans are probably the fattiest nuts).  And there’s really no need for a pie crust.

Chocolate Eclair— this is one of my favorite desserts, and it’s so easy to make.   It’s made up of layers of low fat graham crackers, fat free, sugar free pudding, and fat free whipped topping.  I layered the bottom of the dish with graham crackers first and filled in a layer of chocolate pudding, then another layer of crackers, and finally a layer of vanilla pudding, covered with the whipped cream.  It tastes better after sitting in the fridge for the day, so that the graham crackers can soften.

Trader Joe’s cinnamon coffee cake— Mm another yummy TJ’s box mix (tastes like a cinnabon)!  I made it a bit healthier–  Mix only 3 tablespoons of oil and add about 1/2 cup apple sauce in its place.

Horchata (the easy version)– there are a few ways to make horchata… a common way is by soaking rice, but you can use rice milk or almond milk and almond extract.  The cinnamon sticks complete it!

Yogurt Parfait—  For a super easy and low cal dessert, layer crushed graham crackers, fat free vanilla Greek yogurt, fat free whipped cream and fat free caramel topping.
