Happy autumn, everyone!!! Ahhhh, my fave for so many reasons..
How could I not get (ridiculously) excited with the first crunch of newly fallen leaves under my feet and the refreshing feel of crisp autumn air? This means soft scarves, leather boots, cozy layers, festive costumes, pumpkin everything, spiced cider, apple picking, foliage hikes, fireside lounging, and hayrides through the pumpkin patch (or haunted forest!)…followed by the holidays, snoww and boarding season!!
Cheesy chipotle quinoa “mac n cheese” stuffed jack-o-lantern peppers:
I worked off of this recipe (using fat free cheddar cheese and ricotta), and simply stuffed my (already carved) peppers with the mix, then baked them at 350 degrees for about 40 minutes. Also, see a similar jack-0-lantern pepper recipe that I posted last year, here.
