Eggnog Muffins, eeee Holiday Joys

You don’t have to be afraid of eggnog!….at least not Trader Joe’s light version.  In fact, you should probably go ahead and use it in somanyythiiiings.  Like muffins or pancakes!  Here is the recipe I worked off of for these delicious, perfect-for-the-holidays eggnog muffin bites.  And here is a “knock-off” version that is super healthy, but it doesn’t actually use eggnog…..

Oh and a tip:  pour some eggnog over top!  I also made a bread, along with the muffins, so I made a little hole in the top of a piece and drizzled some nog over.

My version:

Dry Ingredients::

  • 2 cups whole wheat flour
  • 1 tbsp baking powder
  • Tons of cinnamon
  • A pinch of cardomom
Wet Ingredients::

  • 2 eggs
  • 2 tsps vanilla extract
  • 1/2 cup splenda brown sugar
  • 1 and 1/2 cup eggnog
  • 1 cup apple sauce
  • 3 tbsp olive oil

Bake at 375 for 18-20 minutes…ta-da!
