Instead of making an Asian sauce for these (which would have been equally tasty), I made a fat free ranch dressing– goes great with the avocado, cilantro and onions, since it’s pretty much a salad wrapped in zucchini. For the healthy version of ranch dressing, simply mix fat free Greek yogurt with a packet of ranch flavoring.

I soaked and boiled the chickpeas in water first to soften them up.
Fired up the rice cooker with quinoa…
Add some flavor — I also added some falafel seasoning to my chickpea mixture.
