Healthy Junk Food

Healthy versions of junk food, hurray!  Scrumptious mac-n-cheese, nom nom pizza bites (made out of leftover quinoa from the mac), and zucchini chips (which did not really turn out for me..but I thought I would pass along the idea).

Mac-n-cheese:

Technically it’s supposed to be chipotle mac-n-cheese….and made out of just the quinoa, no pasta shells.  But I used a jalapeno instead of chipotle pepper, and I wanted it to be justtt a bit more mac-n-cheese like, so I threw in some whole wheat pasta shells.  I used egg beaters where it called for eggs, lite cheese (normally I would use fat free, but I didn’t see any at Trader Joe’s), and I didn’t bother with any flour (it made it in my ingredients photo though).  Ohh, and I decided to throw in some sriracha (duh), as well as some salsa…because, eh, it needed to be used.  It all went well together.

Quinoa Pizza Bites

Made some major modifications to this recipe..  I decided to use tomato sauce in the main mixture, rather than just for dipping; egg beaters instead of the real thing; and I left the cheese and basil out of the mixture, and simply placed a slice of Cabot 75% fat free cheese atop each piece (once taken out of the oven) and topped each with a basil leaf.

Andd the stubborn zucchini chips, that justt didn’t do what I wanted.  Love the idea though (maybe yours will turn out better).
