Key Lime Pie

Ah, another scrumdiddlyumptious pie that only requires 4 ingredients and just a few minutes out of your day.

The fresh lime in this no-bake pie is what makes it so tasty, so don’t skimp on that!  It looks like a science experiment while in the mixing stage (neon green gelatin), and then a delightful key lime pie is formed!  This recipe leaves the crust out, but I’m sure it would be delish poured into a graham cracker pie crust.

It only takes about 5 minutes to whip all of the ingredients together, but take into account the 3 hours of fridge time that you will need for the gelatin to transform into a pie.

Add this to your grocery list:

  • Sugar-free lime gelatin
  • Fat-free cream Cheese
  • 1 lime
  • Fat-free frozen whipped topping

Dissolve gelatin in boiling water; beat cream cheese in bowl until smooth; mix liquid gelatin with the cream cheese; add the lime juice and lime peel; blend the whipped topping into the mixture; pour into your pie dish and put it in the fridge to harden.
