Lo Amo la Pizza

Liike 90% of my recipes are pizza-related (seems that way)…because lo amo la pizza!  Who doesn’t??  I’ve decided to jazz up a few food posts here and there with my vacay pics that correspond with the recipes.  Since I’m absolutely obsessed with Italy (and proud to be 1/4 Italian!), tastes of Italy are the first to be highlighted.

This mini “pizza” recipe (or bruschetta..however you want to look at it)  is made with polenta– a corn based food that is a staple of northern Italy, and is low cal, fat free and deelish.  You can add whatever flavor you want to it if you’re making it from scratch, but I like to buy the pre-made kind in the tube…specifically, the garlic basil.  This is found at any regular grocery store, typically in the (expensive) health food isle.

Slice it up, add your tomato sauce, garlic, jalapeno, red pepper, cheese, tomato, and finally, a basil leaf on top (once out of the oven).  Throw it in the oven at 400 degrees, for about 10-12 min.  Here is a yummy recipe to work off of, but you can really do whatever you please!
