Happy world vegetarian day! Raised a vegetarian, it’s easy for me to love tofu….but I can see how people might not ha. For those that dooo, here is a dinner idea for you to try tonight..
Ingredients:
- Package of extra firm tofu
- 1 orange
- 1 cup orange juice
- peas (or broccoli, green peppers…)
- 1 onion
- garlic
- olive oil for sauteing the onion and garlic
- soy sauce (optional)
- teriyaki sauce (optional)
- almond slices (optional)
- quinoa in place of rice (optional)
- wondra flour (optional) to make the sauce thicker
Directions:
- Blot excess water from tofu, slice into cubes, brown in the skillet with olive oil
- move to one side and saute the onion and garlic
- toss in whatever veggies you are using
- mix up the sauce to taste, in a separate bowl– a fresh squeezed orange, cup of oj, and however much soy sauce and teriyaki sauce is desired
- pour over contents of skillet, cooking 1-2 minutes and then adding wondra flour to thicken the sauce if needed
- enjoy over quinoa or rice
