Here’s a muffin you can’t feel too bad about– it’s pretty much a peanut butter and jelly sammie, after all!

Ingredients:
- 1/2 cup apple sauce (the recipe called for 2 bananas, but I substituted applesauce in place)
- 3/4 cup peanut butter (or almond butter, sunflower seed butter..)
- 1/4 cup honey
- 3 eggs
- 1 tspn vanilla extract
- 1/4 cup whole wheat flour (or flour of choice)
- 1/2 tspn cinnamon (I always dump cinnamon in..no need for measuring)
- 1/2 tspn baking soda
- 1/2 tspn baking powder
- pinch of salt
- 1/4 to 1/3 cup jam for dropping into the middle of the muffin (I added heaping spoonfuls of jam onto the batter)
