Pesto Spaghetti Squash

So yumz!  The recipe for this pasta dish..er..veggiiiee dish-  is from SkinnyTaste.com.   Go for thirds.  Feel no guilt.

You can make it as quick & easy as you want- microwave it and toss spaghetti sauce over top if you are really in a bind (save those hours for the hair & makeup and 10 outfit changes).

Grocery List:

  • 1 spaghetti squash
  • Basil leaves
  • 1 small clove garlic
  • 1/4 cup olive oil
  • Salt and pepper
  • Packet of pesto sauce mix
  • Cherry tomatoes
  • Parmesan cheese to sprinkle over top

Directions:

Cut squash in half lengthwise and scoop out the seeds.  Cover and microwave for 8-9 minutes (I put mine in the oven at 425 when the microwave wasn’t coming through for me).

Scoop out the spaghetti-like insides.

Mix the pesto packet with olive oil and water and boil; remove from heat

Saute the garlic

Pour the sauce into the skillet with the garlic; add the squash strands and mix, adding salt and pepper;  toss the cherry tomatoes, basil and parmesan cheese over top.

Munch!
