Piece-of-Cake Pie

This frozen peanut butter & cookies ‘n cream pie is by far the easiest pie I’ve ever made (a piece of cake…heh heh), yet it looks rather fancy.  But shh, no one has to know that it only takes about 7 minutes! (not counting the time it takes to freeze).  Mix four ingredients together, pop it in the freezer for 3 hours, place it on the table and watch it disappear.  The pretzels are not just for garnish- they are mixed into the pie filling, giving this summer dessert an interesting twist.

As always, I tweaked the recipe a bit and went with a graham cracker “crust” instead of a chocolate, store-bought one.. I simply crushed up low-fat cinnamon graham crackers into my pie dish.   It’s not much of a crust (I only used 3 full crackers), but it’s enough to make you feel like it’s a real pie, without the added calories.

For the frozen yogurt, I chose fat free cookies ‘n cream…again, not what the recipe called for, but much more exciting than vanilla!  And it goes well with peanut butter.  But what doesn’t go well with peanut butter?  It’ a whole-lotta flavor packed into one little pie, (cinnamon, peanut butter, cookies ‘n cream, pretzel), but it is a dee-licious blending of ingredients.

The 4 ingredients in this scrumptious pie: Peanut butter, frozen yogurt, pretzel sticks, pie crust/graham crackers.  It’s mostly just frozen yogurt, but this creation is way better than offering up a tub of store-bought froyo at your next party.

Recipe from EatingWell.com:

  • 3 cups low-fat vanilla frozen yogurt, softened
  • 1/3 cup creamy natural peanut butter
  • 1/4 cup broken thin pretzel sticks, plus more for garnish
  • 1 9-inch chocolate-cookie pie crust– or substitute with the crushed low-fat graham crackers
  • Combine frozen yogurt and peanut butter in a medium bowl. Stir in 1/4 cup pretzel pieces. Spread into crust. Freeze until very firm, at least 3 hours. Let stand at room temperature for about 10 minutes before serving. Top with more pretzel pieces, if desired.
