Happy Friday! Reward yourself for making it through the long week with some pizzaaa…or at least with this healthy alternative, using a recipe found here, on Natural Noshing.
I made a regular sized casserole, but filled up two small ramekins as well, just for a cuter, personal pan pizza feel!
Grocery List
- Quinoa (1-2 cups)
- Tomato paste (4 oz can)
- Garlic (a few cloves)
- 1 Onion
- Olive oil (2 tablespoons)
- Fresh basil
- Can of roasted diced tomatoes
- Cheese
- Basil spice
- Garlic powder
- Salt
- Artichoke hearts (1 jar of quartered hearts)
Cook the quinoa; mix up your tomato sauce; combine all ingredients; grease a casserole dish and fill it up with the quinoa; layer with artichoke hearts and cheese (I tried out almond cheese, it’s quite good!); bake at 350 for about 30 minutes; top with fresh basil. Full directions here on Natural Noshing. *Next time I make this I will be sprinkling cheese and chopped basil throughout the entire thing, rather than just on top.
