Pumpkin Banana Bread (with chocolate chips of course)

I needed to use up some over-ripe bananas and wanted to jazz up an average banana bread recipe, so I thought- oooo pumpkin and chocolate chippies!  Except I didn’t have enough chocolate chips, so I improvised with m&m’s…which works out quite nicely– more ooey gooey chocolatey goodness to bite into.

Here is the recipe I found in my search for one to work from.   I baked it for about 20 minutes less than the time called for, so that it would maintain a bit of gooeyness!

Ingredients:

  • 2 ripe bananas
  • 1 can of pumpkin puree
  • 3 1/2 cups flour
  • 4 eggs
  • 1 1/3 cup sugar (half if using the brown sugar splenda mix, which I suggest!)
  • Half a stick of unsalted butter
  • 1/2 tsp. vanilla
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 3 tsp. cinnamon or pumpkin pie spice
  • 1/2 tsp. salt
  • 1 or 2 cups chocolate chips or m&ms
