I needed to use up some over-ripe bananas and wanted to jazz up an average banana bread recipe, so I thought- oooo pumpkin and chocolate chippies! Except I didn’t have enough chocolate chips, so I improvised with m&m’s…which works out quite nicely– more ooey gooey chocolatey goodness to bite into.
Here is the recipe I found in my search for one to work from. I baked it for about 20 minutes less than the time called for, so that it would maintain a bit of gooeyness!
Ingredients:
- 2 ripe bananas
- 1 can of pumpkin puree
- 3 1/2 cups flour
- 4 eggs
- 1 1/3 cup sugar (half if using the brown sugar splenda mix, which I suggest!)
- Half a stick of unsalted butter
- 1/2 tsp. vanilla
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 3 tsp. cinnamon or pumpkin pie spice
- 1/2 tsp. salt
- 1 or 2 cups chocolate chips or m&ms
