Easy and healthy! Found this recipe (but then improvised) from Wendy Polisi’s site http://www.cookingquinoa.net. Click here to get it.
I use a rice cooker to cook my quinoa– 2 cups water to 1 cup quinoa. Tip: add a teaspoon or two of powdered chicken broth mix.
Cut off a thin slice from the bottom so that they can stand up and a slice big enough from the top so that you can scoop out the insides with a knife. Set contents aside to be stuffed back in later.
I sauteed some garlic and added the tomato insides, some arugula and the quinoa.
And of course I added sriracha sauce……..because it goes with everything.
