Pumpkin Fettuccine Alfredo: healthified fall comfort food.
Here’s a nice recipe to work off of, from CookieandKate.com (and see a few posts of mine, listed below, for more healthy pasta dinner ideas)
Make this dish as healthified as you choose- whole wheat pasta, low fat cheese and low fat milk. Note: I skipped the butter and flour part of the recipe and went straight to sautéing the garlic in olive oil; I used low fat cream cheese (about 3 tablespoons) in place of goat cheese; and dumped tons of cinnamon and red pepper flakes in…none of this “pinch” business.
